Are there any advantage that an edited Park has over on two or more Parks plopped from side to side other than it can take space without having to snap on the roads?

As far as advantages to land value and happiness, I dont think so.

 

However, it does allow you to build parks away from roads.  For example, if you have a large square (3x3 of max density buildings), you can place a park in the middle of it.  Place a narrow tree lined walkway perpendicular to the streets, then edit the park and add a large square shaped park to fit in the middle of the square.

Edited parks increase land value greater than the original park.  Parks and land value all connect to each other, and sometimes you put a park down that might be too far from your land value, but editing the park, you increase the land value "density" and make those land value connections easier.  Always have land value map on when placing parks and editing parks.

I dont think there is a difference between adding on a park vs buildling a new one. The only advantage will be that you have more flexibility on how the second park can be placed such as being placed sideways or away from the street.

Want to build a park somewhere that isn't connected to a road? Build a park, then edit the park, adding parts to stretch it towards the area where you actually want the park to go. You can delete the parks inbetween (in edit mode) once you have the park where you want.

 

The only bit of park you can't delete is the original part snapped to the road.
