Just an idea I had...and want to see if it is possible or not, and if so I have a feeling ireader will be used...
What I would like to do is create a park/landmark or something that acts as a "desirability killer".  A small 1x1 park that wouldn't seem out of place.  I like to have my cities have a well-defined class structure.  I understand the mechanics of the game, and even have the no-kickout mod and less abandonment mod (which helps a lot!); but want a bit more ease of control.  Basically, if I plop this park down, in a certain radius of the park any R$$ or R$$$ takes a huge desirability hit, which would allow me to just zone R and only R$ builds.  Then I would like one for the other's as well (so one that kills R$$$ only, so R$$ can build).  I don't think there is anything that can kill R$ desirability, as they will build wherever they please.  Issue I run into, I don't build very "SimCity" cities - as in my cities don't have huge chunks of industry in one corner, commercial next to it, then residential.  Mine are very similar to US midwest town layouts - you have your main thoroughfare lined with commercial - behind that by a block you have your industry, then behind that your residential.  This creates an issue where I don't have huge areas of air pollution that are bright red - so my R$$ and R$$$ pretty much love the entire city.

I know I can also tax-out my demand, but again - I am generally lazy and don't want to go into the budget, tax demand out, wait for demand to plummet, zone, wait for new buildings to come up, readjust tax, then rinse-repeat.  I just want to place a lot that does it for me!  Any suggestions on what to adjust on the exemplar to do something like this?

Yes, it's possible. You need to use negative values for park effect to reduce high wealth residential desirability, and negative landmark effect to do the same for high wealth commercial desirability.

I tried it once without much dedication and didn't manage to make it work, for some reason, but it should work if correctly modded.
