Euro Highways

I been looking for this on the STEX for ever now, and I was wondering if anyone knows what I have to search to download the European highways....so they look black instead of the in game gray

Do you mean a Maxis Highway darker texture, or do you mean the Rural/Real Highway Mod (RHW)? There is a mod on the STEX that changes the color/texture of the Maxis Highways.

If that is not what you want, then there is the RHW which allows you to have up to 10 lanes of traffic (5 each way) and custom exits and interchanges.

It sounds like you mean the default highways, so the Highway ReStyling Mod V03 by mrtnrln changes those textures, as the poster above mentioned.  You will also need the Highway ReStyling Mod Asphalt Texture Set Complete to get a full set of textures, and it would replace any textures in the first file.  The Restyling Mod should be placed in a folder beginning with "Z" to ensure it is loaded last.  mrtnrln has also done euro textures for the RHW, found here.
