I don't know if I want to eat anything from the May Day menu since it's been awfully warm out this way.  Instead, it would be nice to sit down with several glasses of Sapporo Black Label and an expensive layout of sashimi, basically any variety not squid is delicious.

We accept and serve orders for anything.  However, we felt a little reminder of the past was in order.  We have some really nice fresh bluefin tuna or would you prefer fugu?

Well, since you asked a small dish of soy sauce with a dash of wasabi thrown in for good measure.

 

Did you know that in the West they (uh, we?  I don't really know how I should say that anymore) don't use real wasabi?  They use horseradish instead, wasabi is expensive to import like that, apparently.

Funny.  I can get wasabi fresh in the produce section of my supermarket along with many oriental items.  I believe our farms are diversifying to satisfy the changing tastes of the people.  Of course parts of our climate are quite similar to that of the orient.

Ooo, that's good.  Restaurants, though, will use the cheapest stuff they can get their hands on, however.  Because of this, I probably won't be eating much sushi or sashimi at all when we get back this month.

Well, maybe if you live near Detroit, but if you live in upstate Michigan across the lake from me, I don't know of any upscale restaurants that would serve sashimi in an acceptable freshness.  This is a long way from the coast here, and shipping a whole tuna by air makes the whole thing very expensive.  You might have to go as far as Chicago to find a suitable Japanese restaurant.  I suspect most of the oriental eateries in the area are chop suey joints.

 

However, here is a little upscale Chinese fare to give you something to think about.

Memorial Day in the U.S.

 

This holiday was instituted as Decoration Day right after the Civil War and has a great tradition of remembering the fallen in the service of the country.  Have a good day.

Something I whipped up for myself to follow my bowl of lobster bisque last night.  The bisque was purchased at the grocery store.

Saffron Rice for One

1 Chicken Stock Sachet (OXO or other)
1 Slice Cooking Onion (about 2-5 mm) finely diced
5 or 6 strands of Saffron
1/3 Cup Long Grain Rice
2/3 Cup Cold Water

Salt for adjustment (see method)

Put Chicken sachet, diced onion, saffron and rice in a casserole with a tight fittng lid (we are making steamed rice) 
Mix well

Add water, put on lid.

Microwave on High (1200 watts) for 2 minutes, then on the second lowest setting for 18 minutes. (Total cooking time 20 minutes as usual for rice).

About five minutes before the end of the cooking cycle taste for salt, adjust, and resume cooking. This step is needed because of the usually rather salty chicken sachet.

Container will be hot, so use oven mitts.

Remove container, remove lid. All water should have been absorbed. If not, microwave for a few minutes longer.

Stir well and serve.

This makes about 1 cup of nice flavoured rice and it can be served as a side or main starch.

I hope they catch these fools. Probably drunk, which is against the criminal code while under weigh, no life jackets, probably no boat license, harassing wildlife.

Let's see. The boat driver loses his licences to drive any vehicle within the confines of Canada, including its air space. Charged with aiding an abetting the wildlife charge, he should also get about three months in durance vile.

The perp should be removed from the scene and fined heavily. I think about 180 days in a logging camp at hard labour should be about right for him.

We meese are not a tolerant bunch.

I will definitely partake in some of that!  Also, because wine does not agree with my stomach at all, please include some sort of high-quality Canadian beer, something with a nice, golden color.

You are welcome. Formosa Springs is just up the road from me, and is something of a small pot brewery.

I've been experimenting with the Italian cheese Mascarpone, which is like a very smooth cottage cheese make from cream.  It is wonderful for expanding cream sauces and for making some spreads.  Here is a recipe I made up the other day that turned out well. If you want a mild chocolate sauce:

Chocolate Delight

2 Dessert Spoons (or more) Mascarpone
1/4 tsp Vanilla Extract
1 tbsp Cocoa
1 tbsp Granulated Sugar
1/2 tsp Instant Coffee
pinch salt (for flavour blending)
a few grains black pepper (enhances the chocolate)

Place all dry ingredients in a mixing bowl and mix well

Add the Mascarpone and vanilla.
Using a whisk, mix thoroughly until smooth.
Refrigerate overnight, covered.

When overnight blending is complete, taste and adjust flavourings if necessary.
Blend again.

Use as desired.

If you want more chocolate power in this stuff, double the dry ingredients and increase the vanilla extract to taste.

This sauce works as a dip for fresh strawberries, bananas, and other small fruit.  It also makes a nice spread for plain (unsalted) crackers, when you can use it as an underpinning for some dessert, or make a Napoleon using it as the filling.
