What could I add to the sides of the highways and avenues that would make it look better like mods or plop lots any ideas??

I like trees, can't go wrong with trees.  Look up some ploppable tree mods on the STEX.

Personally I like to put down grass and then plant some trees on the grass alongside my highways. Sometimes I'll use the noise walls available on the STEX since they're a common sight alongside many highways.

I think you can be the judge of that, I mean go back and look at your first post pics and now look at the new ones, 10x's better.  what i have learned is just to experiment experiment and experiment some more.  One thing to keep in mind is not to get carried away with them.....you don't want it looking like a jungle unless that's your theme.  the goal isnt to cover every inch of space either, here is a pic from my town Abbeville to give you an idea.  Im no expert, but hope this helps.

I agree---trees are the way to go. 

Mind you, real life highways passing through populated areas often are incredibly ugly---I always shudder at the thought of what the noise must be like in one of those housing developments built right up to a highway, in spite of noise barriers. So maybe ugly is okay sometimes, if you want a touch of (nasty) realism! Look at the way slums and rowhouses always were built around railyards....
