I know that there is already a mod that changes the region view transportation map, but it doesn't include subways. So my question is: would it be possible to include subways to it somehow?

Would it be possible to create on-slope train stations? I mean, the station would be on ground level, but some kind of stairs would then lead to the sunken tracks. I know these kinds of stations are pretty common irl. How about some Art Nouveau masterpieces? Pohjola insurance company, Helsinki. I absolutely love this one, it's so unique. Take a look at some of it's amazing and (quite bizarre) details.
