I having trouble with Highways. You need to elevate them to get other road underneath, but I can seem to transition back to avenues. I always get a gap in the elevated road when I try to connect to a highway. Anyone got some useful tips or suggestions?

It is easier to run the avenue into the highway, and you have to have at least one tile [maybe 2] away from the end of any transition.
 
EDIT: I am not sure what you are talking about the elevated road connecting to a highway.

I think I understand exactly the issue that the OP is raising.  I think you're asking why you can't turn a highway into an avenue, i.e., attach an avenue to the end of a highway.  If that's the question, I think that the answer is that you have to have at least one or two pieces of highway continuing from an overpass.  So, you can't attach an avenue to a highway piece right after an overpass connection.  I hope this makes sense and answers your question.

I have a question about highways. I'm able to put an on-ramp on one side of the highway (freeway in my neck o' the woods), but not the other side. I'm pretty sure it's a simple procedure, but I've tried everything I can think of and only one side of my highway is useful at this point. What can I do?

I am assuming you are not talking about putting it in the same place. Move the mouse to get the both sides, if you have the room.  It takes more room to plop than after it is plopped, if that makes sense.
