Reskinning aircraft mods

There is a tutorial on how to reskin a car here. Altohough the model is not the same, the process of reskining it is exactly the same, you are just using a plane instead of a car.

Thats a helpful tutorial, but I always wondered, how do you go about creating a new skin for a new model? I've read the tutorials on it but I can't seem to grasp the concept or how it's done.
