Where can you find all these waterfront development things? I see lots of different docks and rock walls and what not, where can you find those? because they look really good. 

And also where can you get hotels?

Also, what about those older looking buildings? They look Parisian almost. Very ornate.

Search on the STEX and LEX for users such as Pegasus and Marrast. There are quite a few other creators too, just search for items such as seawalls, docks, and so forth.

As for hotels and aging buildings, you'll just have to look around. For Parisian-looking buildings, search for users like Cobb or Porkisimo. They have some great Parisian stuff.
